What once seemed like a simple meal now required calculation and planning.

And just like that mathematics was integrated into our daily living.
Who would have thought that something as ordinary as potatoes had so many carbs? At first, it all seemed impossible—overwhelming carb tables from the hospital and the pressure of getting it right were daunting. But as the weeks turned into months, we found our rhythm. The rest of the family became very aware of nutritional facts and even started cleaning up their own eating habits☺️
We soon realized that candy and chip days needed to be split—combining sugar and fat turned out to be an impossible combination, leading to rapid highs and swift lows. Yet, despite the challenges, we noticed we were surviving just fine without all those hospital pamphlets. In fact, we had become somewhat professionals at calculating carbs and injecting insulin, navigating this new normal with confidence.
